Mexican Sopes

Mexican cuisine is renowned for its rich and flavourful dishes, and sopes are a classic example of that. These delicious, traditional Mexican snacks are made with various toppings and will tantalize your taste buds.

Sopes are essentially thick tortilla cups loaded with various toppings, such as beans, meat, cheese, lettuce, and tomato – making them an incredibly versatile and delicious option for appetizers, snacks, or even a meal.

To make them, masa harina (corn flour) is mixed with water to create a pliable dough, forming into small, thick circles. The circles are flattened and then cooked on a hot comal or griddle until golden brown and crispy.

Once the circles are cooked, the edges are pinched up to create a small cup-shaped base filled with the toppings of your choice. The options are endless – from savoury shredded chicken or beef to vegetarian toppings like beans and cheese, there is a sope for everyone’s taste. Toppings like crumbled queso fresco or sour cream can also be added on top for extra creaminess.

Sopes are a great appetizer or snack option, as they’re filling and satisfying yet not so heavy that you’ll be too full to enjoy your main course. Plus, they’re perfect for entertaining, as they can be served individually, making them easy to pass around at parties, get-togethers, and other events.

Ingredients

  • 4 slices wholemeal or white sandwich bread

  • 1 apple (e.g. Pink Lady), thinly sliced

  • .5 cup (60g) grated cheddar cheese

  • 1 tbsp butter or margarine

  • .5 tsp ground cinnamon (optional)

  • Drizzle of honey (optional)

Directions

  • Butter one side of each slice of bread.
  • Place two slices, buttered side down, on a sandwich press or frypan.
  • Layer apple slices and cheese on top. Sprinkle with cinnamon or drizzle with honey if desired.
  • Top with remaining bread slices, buttered side up.
  • Grill for 3–5 minutes, or until bread is golden and cheese is melted.
  • Slice and serve warm.

Notes

  • Use raisin bread for a sweet twist.
  • Swap cheese for brie or mozzarella for variation.
  • Great for using up apples near the end of their shelf life.
  • Ideal for lunchboxes when cooled and wrapped.
  • Can be made dairy-free with plant-based cheese and margarine.
