Once the circles are cooked, the edges are pinched up to create a small cup-shaped base filled with the toppings of your choice. Method

  1. In a mixing bowl, combine masa harina, warm water, and salt. Mix until a dough forms.

  2. Divide the dough into 8 equal portions and roll each portion into a ball.

  3. Flatten each ball into a disc shape, about 1/4 inch thick.

  4. Heat a griddle or skillet over medium-high heat. Place the sopes on the griddle and cook for 2-3 minutes on each side, until lightly browned.

  5. Spread a spoonful of beans on each sope. Top with shredded chicken, lettuce, queso fresco, tomatoes, onions, cilantro, and sliced avocado.

  6. Serve hot, and enjoy!
