American Potato Salad Recipe

Ingredients

  • 1 kg Potato waxy such as kipfler
  • 125 grams Bacon or ham
  • 1/2 cup Sour Cream
  • 3 Eggs hard boiled, cooled and peeled
  • 100 grams Cheese cut into small cubes
  • 1/2 cup Mayonnaise
  • 3 Spring Onions finely chopped
  • 2 tsp Mustard

Method

  1. Peel and cut the potatoes into large quarters and boil in salty water for 20 minutes or until tender.
  2. Drain and allow to cool.
  3. Cut the quarters in half again.
  4. Cook the bacon or ham in a frypan until nice and crispy.
  5. Add all the ingredients into a bowl and stir very gently until well combined.
  6. Serve warm or cold!

Notes

Makes a terrific accompaniment to the Fried Chicken.

Recipe Hints and Tips:

  • American Potato Salad is not suitable to freeze.
  • Best made fresh on the day it is eaten.
  • If you're not keen on mustard, substitute with curry powder - it gives it a bit of a kick!
