I do love a savoury fritter for lunch and these Savoury Bacon and Corn Fritters are on top of my list when I feel like munching on some.

They’re easy to make, the ingredients are affordable and is a staple in my house, plus they are delicious and filling.

What I like about this is that you can include other ingredients such as scallions, jalapeños, or cheese to enhance the flavours and then its like you’re eating something different but familiar!

Enjoy this as a side dish or as a main course with a side salad, garnish with mayo, herbs, sour cream, or a drizzle of hot sauce. Endless possibilities!

Savoury Bacon and Corn Fritters | Stay At Home Mum

Method

  1. Preheat oven to 240°C/220°C fan-forced. Cut potato into wedges.

  2. Place wedges on the lined oven tray. Sprinkle with all-purpose seasoning, season with salt and drizzle with olive oil.

  3. Toss to coat and bake until tender, 28 mins.

  4. Meanwhile, thinly slice brown onion (see ingredients). Heat a drizzle of olive oil in a large frying pan over a high heat. Cook diced bacon and onion, breaking up with a spoon, until golden, 5-6 mins.

  5. Stir in the balsamic vinegar and brown sugar, and cook until combined, 1-2 mins.

  6. Drain sweetcorn. Grate carrot. Using a paper towel, squeeze out any excess moisture from carrot.

  7. In a medium bowl, combine corn, carrot, bacon, onion, the plain flour, salt, egg, milk and a pinch of salt and pepper (if it's too wet, add more flour).

  8. Wipe out pan and return to medium-high heat with enough olive oil to coat the base.

  9. When oil is hot, cook heaped spoonfuls of fritter mixture, flattening with a spatula, until golden, 3-4 mins each side (don't flip too early!). Cook in batches for best results. You should get 3-4 fritters per person.

  10. Transfer to a paper towel-lined plate.

  11. Slice tomato into wedges.

  12. In a large bowl, combine tomato, salad leaves and a drizzle of olive oil and of balsamic vinegar. Season to taste.

  13. Divide fritters, wedges and salad between plates. Serve with mayo and enjoy!
