My boys have never voluntarily eaten a vegetable without dry retching.
It is so infuriating because all the Mummy Websites and Baby Books say that if you continue to offer them vegetables on their plate, they will eventually try it. I can’t even get that far. And hubby and I adore our vegetables.
So, I’ve been hiding them in their meals for years. Otherwise I’m sure they will die of scurvy.
This one’s delicious with a mash-like feel to it. It’s so easy to make, too and contains a lot of veggies in it!

Isn’t it strange that kids can find the smallest piece of onion in any dinner they eat, but they still can’t find their shoes! Infuriating huh! Well like all Mums, I’m always trying to get my kids to eat more veggies, this is my secret weapon to get them to gobble them up – without the whinge factor.

If you’ve never put vegetables in your baked goods, these Chocolate Beetroot Brownies are a great place to start. They aren’t ‘healthy’ as such, but they’re certainly less of a guilty pleasure than regular brownies, but with a really great flavour and a super intense hit of chocolate.

The flavour of the sweet potato is just lovely in these, but if you want to tone done and opt for a milder flavour choose the white-flesh purple-skinned sweet potatoes over the traditional variety. Either way it tastes amazing!
