Chicken Pot Pie
I love making heaps of this recipe – but I don’t make it into a pie to freeze, I just make the mixture and freeze it on its own. Because I can turn it into a pie if I wish, or add pasta or serve it over rice – it is very versatile!
Chicken Rissoles
If you ever grab chicken mince or Turkey Mince (which has loads less calories and tastes similar – but can be slightly dry in taste) – grab it and make a massive bunch of rissoles! Rissoles can also be eaten as burgers, or make them tiny and have meatballs – and the kids love these!

I always keep a few batches of these bad boys in my freezer – the boys know they can grab them out – ding them in the microwave for a bit – then pop them in the oven for 20 minutes and they are so yummy!

Sure – you can buy these pre-made in heaps of shops – but you pay up to $5 each for them – that makes for an expensive dinner for a family of four. They are really easy to make – when you buy chicken breast on sale – make a massive bunch of these and freeze them uncooked so you always have them on hand!
